I just bought a new ps3 and had to look up the defaults for the game.

X is stiff arm
L2 is speed burst

for me L1 is stiff arm. L2 is pitch. R2 is speed burst. R1 is throw the ball away.

During my Cup game vs Nole, I actually had to pause the game during my last drive to look up how to spike the ball

you can check your controller settings in the game. I know you can change in an online dynasty game, but not sure if you can do it during a regular online game.

Stiff Arm: X
Lateral: L2
Protect Ball: L1
